Cocoa futures surged to over $12,000 per ton in late 2024. This extreme price volatility led Nestlé, Mondelēz International, and Hershey to permanently reduce cocoa in their products.
Manufacturers are reformulating recipes with more caramel and nougat fillings. Companies are also using thinner chocolate shells and cocoa-free alternatives made from sunflower seeds, oats, and carob.
Nestlé in the U.K. now labels some products as "chocolate flavour" because they no longer meet legal cocoa solid requirements. Confectioners are investing in lab-grown and cell-cultured cocoa to insulate against future market swings. These structural changes persist even as cocoa prices retreat from record peaks.
